How to Make Quiche Lorraine the French Way (Authentic Recipe)

I love quiches because they’re easy to assemble and bake, great to eat warm or cold, and variations are only limited by your imagination. A French Quiche Lorraine originally hails from the Lorraine region in France near Alsace, located between France and Germany.

Quiche Lorraine Recipe

Here is a simplified version using store-bought puff pastry. This particular quiche is typically made with gruyère cheese and bacon (French lardons) on a pâte brisée crust.

This recipe is meant for 6 servings. 

Ingredients

  • 1 sheet of frozen puff pastry (thawed enough to unroll) or 1 frozen puff pastry pie shell
  • 7 oz of bacon, sliced into ½ in pieces
  • 1 ½ cups of grated gruyère cheese (or another similar cheese like Swiss cheese or Emmental cheese)
  • 3 whole eggs
  • 1 ¼ cups heavy cream
  • Salt, to taste

Steps to Make Quiche Lorraine

  1. Preheat your oven to 350F.
  2. In a bowl, whisk together your eggs, heavy cream, and grated cheese.
  3. In a pan, fry your bacon. 
  4. Lay your frozen puff pastry sheet into a greased pie pan, or use a pre-made frozen puff pastry pie shell. Prick dough with a fork. 
  5. Drain your cooked bacon and spread evenly over the puff pastry. Pour the egg mixture on top and bake for 30 minutes.
