How to Make Corsican Cheese Lasagne (Brocciu Cannelloni Recipe)

Corsican Lasagne (Brocciu Cannelloni) Recipe Steps

This recipe serves 4-6 people.

Ingredients

  • Grated Parmesan
  • Olive oil
  • Nutmeg
  • Dried oregano
  • Salt and pepper
  • One onion, chopped
  • 400g Swiss chard
  • 400g brocciu cheese
  • 300g dried lasagne sheets
  • Four cloves of garlic, chopped
  • 1,400g tin chopped tomatoes
  • One tomato concentrate
  • One bunch of mint, chopped

How to Make Corsican Lasagne

First, rinse the chard and chop its stems. Then, braise the stems in salted water for about five minutes in a small amount of lightly salted water for about 5 minutes. Wait until the stems soften, drain, and leave to dry.

While waiting for the stems to dry out, work on your tomato sauce. Sweat the chopped garlic and onion in olive oil until it softens. After that, add the tomatoes, boiling water, and pour. Mix a pinch of dried oregano, salt, and pepper, and leave for at least 15 minutes.

While the tomato sauce is simmering, work on mixing the mint, chard, and cheese. Add black pepper and nutmeg and stir well. Taste it from time to time and add seasoning if deemed necessary.

In making the lasagne, oil your baking tray and follow the sequence. First, tomato sauce, followed by lasagne sheets, brocciu cheese mix, then lasagne sheets. Do this until the sheets run out.

Keep in mind that the top layer should be tomato sauce. Sprinkle some grated Parmesan cheese on top and bake for about 35-40 minutes in an oven preheated to 200°C.

Leave to rest for 10 minutes before serving!
