While every Mediterranean island has its own culture, the island of Corsica is famous for its delicious dishes such as its Minestra Soup and Chestnut cake.

Corsican Minestra Soup Recipe Steps

Ingredients

Here are the basic ingredients you’ll need to make this yummy Corsican soup!

  • Chopped Parsley
  • Salt and pepper
  • Olive oil
  • Dried oregano
  • Two carrots, diced
  • One onion, chopped
  • 5-6 cloves of garlic, chopped
  • One courgette, diced
  • One stick of celery, diced
  • One tin borlotti or dried beans
  • One leek, cleaned and sliced into rounds
  • Four potatoes, diced
  • Half a small cabbage, chopped
  • 1 kg of ham hock (about 1kg)
  • One small tin chopped tomato
  • 100g small pasta (alternatively, you can try broken spaghetti)

How to Make Corsican Minestra Soup

The first thing you should do is fry the chopped onion and the garlic. Next, add the diced carrots, celery, courgette, leek, and potatoes and stir with the onion and garlic.

Leave it for about 4-5 minutes before mixing the tomatoes, beans, and ham hock. Be mindful of the water you put to cover the ham hock, and season generously with oregano and salt and pepper.

Let it simmer and leave it for about 1 hour while checking on it from time to time.

Once done, you can now mix the pasta and cabbage. If you prefer a thick consistency in your soup, add boiling water.

Let simmer for about 10-15 minutes before placing the ham hock outside to slice or chop. Separate the bone and flesh and return them to the pan or pot. Let it cook longer for 5-10 minutes.
