How to Make Ratatouille (Authentic Recipe)

Ratatouille is a southern French dish that hails from the Provence region of France. It is a hearty vegetable stew best made with fresh end-of-summer produce. Ratatouille is a healthy French dish as it is packed with vegetables and can be easily made vegan.

The name Ratatouille comes from the French verb “touiller” which means to stir up. The dish was first mentioned in a traditional cookbook in 1783.

The title of the 2007 Pixar film Ratatouille is a reference to the dish. The classic French dish was featured in the film, with the main character being a rat named Remy who aspires to be a chef.

Here are the steps to whip up this delicious French recipe.

Ratatouille Recipe

This traditional French Ratatouille recipe serves up to 6 people.

Ingredients:

  • 5 tomatoes
  • 2 eggplants
  • 2 yellow onions
  • 1 red bell pepper
  • 1 zucchini
  • 1 clove of garlic
  • 1 sprig of thyme
  • 1 bay leaf
  • 1 sprig of rosemary
  • 3 tablespoons olive oil
  • Salt and pepper to taste

How to Make Ratatouille

  1. Slice all your vegetables into medium sized pieces (all approximately the same size, about ½ inch), keeping them separate.
  2. In a pan, heat oil on medium heat and sautée onions with a pinch of salt. Once translucent, add eggplant and bell peppers, then season with a pinch of salt then let cook on medium heat for 5 minutes. Add the zucchini, add a pinch of salt then let cook for 5 more minutes.
  3. Add the garlic and herbs, then season with salt and pepper.
  4. Cover and let cook on low heat for 30 minutes.
